12 unshucked oysters
¼ cup compound butter
¼ cup Panko breadcrumbs
Preheat grill on medium heat. Wash and scrub unshucked oysters in cold water.
When grill is hot, arrange oysters on grill grate, cupped side down, keeping them level. Close grill cover and cook until shells start to open. Remove them to a platter layered with uncooked rice or beans to level oysters. Be careful: shells will be hot! Let the oysters cool. Remove the top shell using a paring knife and place back on the platter. Add compound butter and 1 teaspoon of Panko. Put individual oysters back on the grill and cook until butter sizzles. Carefully remove and serve.
