Roasted Oysters

Ingredients

12 oysters, shucked
Compound butter, recipe follows
¼ cup panko breadcrumbs

Preparing and Shucking Oysters

Wash and scrub the oysters in cold water. Watch the video below to learn how to shuck the oysters.

 

Directions

Preheat oven to 450°. Arrange shucked oysters on a bed of uncooked rice or beans on a baking sheet. Top each oyster with 1 teaspoon of compound butter. Sprinkle with 1 teaspoon panko breadcrumbs. Bake uncovered about 3 minutes, until butter is sizzling, and crumbs are slightly browned.

Compound butter

To make compound butter, blend the following ingredients:
1 stick softened butter
1 teaspoon fresh lemon juice
1 teaspoon chopped pimentos
1 teaspoon finely minced garlic or shallot or scallion (or all of them!)
