12 oysters, shucked
1/2 cup red pepper, finely chopped
½ cup green pepper, finely chopped
½ cup sweet white onion, finely chopped
3 strips bacon, cooked almost to doneness and quartered
Preparing and Shucking Oysters
Wash and scrub the oysters in cold water. Watch the video below to learn how to shuck the oysters.
Preheat oven to 400°. Arrange shucked oysters on a bed of uncooked rice or beans on a baking sheet. On top of each oyster, arrange peppers and onions in bands to resemble the Italian flag: green pepper, white onion, red pepper. Top with 1 piece of bacon and bake uncovered for 12 minutes until bacon is cooked.
