Oysters a la Cranberry-Lemon Ice


12 oysters, shucked and arranged on a platter
¾ cup cranberry cocktail
Juice of 2 lemons
2 cups simple syrup

Getting Oysters on the Platter
Wash and scrub the oysters in cold water. Spread uncooked rice, dry beans
or shaved ice on a platter or plate – this will keep the oysters level when
serving. Shuck the oysters – see Connor’s video below – and place them carefully
on the rice, beans or ice. Now they’re ready for the preparation.



Directions for Cranberry-Lemon Ice

Mix together and freeze at least 6 hours ahead of time.
Shuck oysters and arrange on a platter. Scrape ½ teaspoon cranberry-lemon ice onto each oyster and serve immediately.
